Each bottle is Tripe Distilled, Non-chill Filtered and carefully crafted using the finest of Local Ingredients.
Formed in 2003 by childhood friends, John O’Connell, Denis McCarthy and Ger McCarthy in a small fishing village in West Cork called Union Hall. Since then, West Cork Distillers has been recognised for our innovative approach and credited with maturing, distilling, and bottling some of the finest craft Irish whiskey on the market today.
West Cork Black Cask
A fine blend of grain (66%) and malt (34%) whiskey aged in first fill bourbon casks for three years, and polish matured for a further year in heavily charred bourbon casks.
AROMA : Malt, lingering sweetness, vanilla and slight smokiness
TASTE : Malt, vanilla and sweetness
ABV : 40%
West Cork 5 Year Old Pot Still
Our 5 Year Old Single Pot Still Irish Whiskey is matured in First Fill Ex Bourbon Casks. It is composed of a unique mash ratio of 66:33 malted versus unmalted barley.
AROMA : Hay and fresh cut grass with a caramel and pear sweetness with undertones of dried fruits.
TASTE : Barley, malt, vanilla and black pepper with a candy floss finish.
ABV : 46%
West Cork 7 Year Old Single Malt Irish Whiskey
The 7-Year-Old Single Malt is the latest malt expression from West Cork Irish Whiskey. As per the Single Pot Still, it uses exclusively 100% local Irish grain and is matured in Bodega Olorosso casks from the Tolerina Rodriguez bodega in Cadiz, Spain for 4 years then further aged in first fill Bourbon Barrels for 3 years.
AROMA : Notes of green fruit, marzipan, and red berries.
TASTE : Pleasant hints of malt, tannins, green fruit, a slight spiciness and citrus. A beautiful finish of malt and red berries

West Cork Rum Cask Single Malt Irish Whiskey
Single Malt Irish Whiskey patiently matured in first fill Bourbon casks and finished in Consorcio Licorero Nacional rum casks. Non chill filtered and no added colour.
AROMA : Notes of honey, vanilla, caramel and chocolate on the nose. A combination of fresh and dried fruit aromas.
TASTE : Roasted flavours of coffee, toast and chocolate, with a dry finish.
ABV : 43%
West Cork Port Cask Single Malt Irish Whiskey
Single Malt Irish Whiskey patiently matured in first fill Bourbon casks & finished in Quinta Da Boeira port casks. Non chill filtered and no added colour.
AROMA : Dried fruit with spice notes of nutmeg and black pepper. Vanilla and toffee also present.
TASTE : The port cask finish is the sweetest of the offerings, with prominent notes of dried fruit.
ABV : 43%
West Cork Sherry Cask Single Malt Irish Whiskey
Single Malt Irish Whiskey patiently matured in first fill Bourbon casks & finished in Bodegas Baron sherry casks. Non chill filtered and no added colour.
AROMA : Dried prunes, fig, sherry and vanilla notes.
TASTE : Sweet at the beginning but then finishes dry with some spiciness present.
ABV : 43%
